Mince pies, anyone?

A local baker has just launched a brand new Christmas menu complete with mince pies, biscuit cakes, and more.

Ruairi Domican Byrne, who runs a home bakery called ‘Ruairi’s Kitchen’ on Douglas Street, began his baking business just over two years ago in lockdown and has gone from strength to strength ever since. What started as a career pivot due to covid has now become a booming business with over 100 wedding cake orders already booked for 2024!

With lots of prep work in order, Ruairi has just launched a new Christmas cake menu and a generous portion of each sale will go to Marymount Hospice. On the new menu you will find delicious mince pies, chocolate biscuit pudding, mini chocolate biscuit puddings, and Christmas cupcakes in vanilla, red velvet and chocolate flavours.

Speaking to Craving Cork about the venture, Ruairi mentions:

“Ruairis Kitchen Started as a career pivot because of covid. I had worked for 15 years on the front of house side of things in the hospitality sector and decided due to lock downs and the uncertainty with the sector to start my own baking business.

“I make cakes for all occasions, weddings, birthdays, christenings, corporate orders and much much more. I have made 100’s of occasions cakes and weddings have been very good to me. With over 100 wedding cakes made in two years, I have over 100 weddings booked next year  at the moment and I am then hopefully opening the bakery/coffee shop next year so things are looking great for the future.
